Eggplant / Brinjal masala curry



Ingredients:-

Brinjal
Onion -1
Oil
Salt
Red chilli powder - 1/2 sp
Curry powder - 1 tbsp


In a nonstick tava, add 1 sp oil and fry the onions till pink.
Add brinjals and saute.
When they are half cooked, add salt and saute for few more minutes.
Add red chilli powder and curry powder, fry.
Serve hot with rice.
